General Session
Taste and smell shape appetite, food choice, nutritional intake, safety, and quality of life, yet sensory dysfunction is often overlooked in nutrition care. In this keynote, Dr. Paule V. Joseph will examine how chemosensory function intersects with metabolism, brain health, and the patient experience. Drawing on clinical and translational research, she will demonstrate how integrating patient-reported symptoms, objective sensory assessment, and interprofessional science can move the field from recognizing sensory changes to delivering more precise and patient-centered nutrition care.
Paule V. Joseph, PhD, MBA, MS, FNP-BC, FAAN, is a nurse scientist, family nurse practitioner, and Senior Investigator at the National Institutes of Health. She serves as Chief of the Section of Sensory Science and Metabolism at the National Institute on Alcohol Abuse and Alcoholism and Co-Director of the NIH National Smell and Taste Center, with a joint appointment at the National Institute on Deafness and Other Communication Disorders. Her clinical and translational research examines how taste, smell, and chemesthesis interact with eating behavior, metabolic regulation, brain function, and health. Her program integrates clinical neuroscience, genomics, metabolomics, neuroimaging, and computational approaches to improve the diagnosis, prevention, and treatment of chemosensory disorders. Her research addresses major health challenges, including obesity, alcohol use disorder, and neurodegenerative diseases. Dr. Joseph is a Fellow of the American Academy of Nursing and a member of the National Academy of Medicine.
